    Global Vegetable Diversity Declines as Intake Falls Short of Dietary Guidelines, Study Says

    An international team of nutrition, agriculture, and botany experts has published findings in Proceedings of the National Academy of Sciences reporting that global vegetable consumption falls short of dietary recommendations while the diversity of vegetables grown for food continues to decline. Agriculture scientist Maarten van Zonneveld led the research while working at the World Vegetable Center. According to the report, most people worldwide consume about 40 percent fewer vegetables than recommended for a healthy diet.
