Brain changes linked to ultra-processed foods, studies reveal structural alterations in key regions

A study analyzing nearly 30,000 UK Biobank participants found that higher UPF consumption was linked to changes in brain regions involved in hunger, emotional responses and reward, regardless of obesity status.
A separate study of 8,783 Canadian adults found that high consumption was associated with 40% higher odds of vascular brain injury, with the association particularly strong among women, who showed 78% higher odds in the highest-consumption group compared with the lowest.
Researchers observed elevated inflammation markers and associations between UPF consumption, increased body fat and greater visceral fat. These findings suggest potential pathways linking dietary patterns to brain and vascular damage.
Despite evidence of structural and vascular abnormalities, the Canadian study found no significant association between UPF intake and performance on standard cognitive tests. This suggests that early brain injury may occur before measurable cognitive impairment develops.
Because UPFs account for a substantial share of diets in many countries, the potential effects could be widespread. However, the studies establish associations rather than cause and effect, highlighting the need for long-term research to clarify whether reducing UPF consumption can protect brain health.
